Grilled Pizza

I saw Grilled Pizza on the Food Love blog and instantly knew that I needed to have it for lunch. I wish Food Love was like a restaurant and I could see something yummy and order it -- no work required. I mustered up the energy out of sheer desperation for this tasty treat and made it for lunch today.




I started out by grilling my chicken on the BBQ. I made this super quick pizza dough recipe while it was cooking:

stir together:
1 C. warm water
1 t. sugar
1 TBS. yeast

Let set until bubbly.

Add:
1 t. salt
2 T. olive oil (here is another change)
2 1/2 C. flour, plus more to make a sturdy dough. I use half ww flour

Let it rise for about 5 to 10 minutes in a warm place while you continue your prep work.

Knead a few times on a floured surface. For grilled pizza, divide into small individual portions and roll out.

I was planning on making Kelleigh's BBQ Chicken Pizza toppings. But then I realized I had no BBQ sauce. I also had no spaghetti sauce. What to do....




I ended up using crushed tomatoes with oregano and basil with a little salt added. My pizza toppings were unconventional, but the final product was very, very good:

Moteray Jack Cheese, grated
Grilled chicken
Olives
Pineapple



The dough goes right on the grill, so make sure you put on plenty of olive oil. Let it brown and then flip it and add the toppings. My pizza rounds were a bit large and my grill was too hot, so I burned some of the edges. I live and learn! Make the rounds small and have consistent, medium heat. Put the lid down and let the topping heat through and the cheese melt.




The final product has a smokey, chewy crust. Oh, my. Oh, my. I closed my eyes and thought I was back in Italy. I was on the Amalfi Coast at a tiny bistro overlooking the vibrantly blue Mediterranean. A glass of sweet red wine and a pleasant breeze. It was bliss. But what is that biting my ankles? Back to reality and hungry children who want to eat. Nix the red wine, put milk in sippy cups and let's get some lunch on.




I will definitely be grilling pizza again. It also inspired me to grill quesadias too. Add some cheese, chicken, salsa, and black beans. Sounds good to me. What have you been grilling lately?

Gaining ground...

This is a verse that touched me today.



I went to see Jamin at Dornbecker today with a mutual friend of both Kelly and I. It was great to see happiness on the nurses faces and joy in John and Kelly's eyes as they explained the progress Jamin is making. They took out one of the chest tubes while I was there and put him on a different ventilator that allows him to breath more on his own. The medical staff is amazed at the quick pace Jamin is gaining ground! My faith is increased as I thank God for His goodness. Our hope is that Jamin will have a full recovery and be a testimony to God's power. Please continue to pray with us.

Fallen to my knees


I was trudging along, looking at my feet in my spiritual walk. The road was easy, but still my steps were slow. When the incline increased slightly, I took any excuse to sit down, my back to the goal. I pouted and found reason to complain. With my progress stilted, every problem seemed so huge. Gentle nudges may have forced me to standing again, but sometimes I didn’t even move to take a step forward. I just stayed in one place with slumped shoulders. It wasn’t even that my burden was heavy; it was laziness that caused me to slow.

“Fix your eyes on Jesus, the author and perfecter of our faith, who for the joy set before him endured the cross.” Heb. 12:2





As I stood in one place, something happened that knocked me flat. It was a crisis. Not just an everyday problem, but something real. A baby who was supposed to be healthy was sick instead. Parents who should have been holding their precious new son were holding vigil beside a tiny hospital bed. My nephew was born and couldn’t breath well and suddenly I realized I had forgotten the goal. I was laid flat, but I lifted my head and saw the promise.

"Be strong and courageous. Do not be afraid or terrified because of them, for the Lord your God goes with you; He will never leave you nor forsake you." Deuteronomy 31:6





Because of this heavy burden, it was all I could do to crawl. And here I find myself on my knees. The goal is before me and I can see more clearly, even through my tears. My hands are bloody from dragging myself forward. And I long to walk on sturdy legs on the easy road I was traveling before. I wish I could have realized how easy it was before.

“May the God of hope fill you with all joy and peace as you trust in him, so that you may overflow with hope by the power of the Holy Spirit.” Romans 15:13

Sweet Dress Recipe



So, on the subject of dress patterns... Sweet Martha B., of the now retired blog Nibs, sent me these images from a Japanese pattern book she bought called "Sweet Dress Recipe" (adorable, right?)!

A few of you asked about the ease of using Japanese pattern books (a concern of mine as well)... Anabela of Field Guided (who recently made a dress out of the book "Stylish Dress Book 2") offered a couple insights: "I find the patterns are pretty easy to follow. The diagrams are detailed, although the measurements are given in centimetres. If you know basic garment construction you'll be fine!"

I am going to make a trip to our local Japanese bookstore in Portland to check out some of the books in person, I will let you know how it goes.... In the meantime, more Japanese pattern books available here. Read More.. Read More..

What's important right now...

Day 4, 8:30pm: Jamin is still in stable condition and his oxygen levels improved slightly. The lung specialist is puzzled because Jamin is not getting better as they would expect. Other experts are being called in to examine his heart as well. Unknown complications are being explored because he should be progressing and is not.

Please pray for peace for John and Kelly, as they cling to God's promises and trust Him.



Jamin update, day 4, 8:30am: One thing after another complicates Jamin's recovery. He crashed last night and John and Kelly were told to prepare for the worst; the worst being that Jamin would not live.

Jamin is now stabilized. The air pockets around his lungs are now more severe. There is a little hope for Jamin's full recovery, but still hope. Please pray for swift miracles. 

This is the worst possible situation that anyone can bare as a child's tiny life hangs in the balance. Kelly said they are continuing to trust God, but what if  his plan takes Jamin away from them? This is the kind of question that makes my heart ache.



My nephew, Jamin was born on Saturday evening, 4 weeks early and weighed 6 pounds, 5 ounces, and 19 inches long. Right away he had troubles breathing. They soon transported him to Portland to a special neonatal unit. He was breathing at over 100 breaths per minute, while normal is about 30-40 for a newborn.

He has some complications as air collected around his lungs. They put him on a respirator and sedated him completely when he started getting worse last night.




I went to see him today and thought I was prepared to see a baby hooked up to monitors and tubes. But I wasn't. I am a mom. I am an aunt. And I was overcome to see such a precious child like that.

Kelly and John (my sister-in-law and brother-in-law) are certainly experiencing this as they can only observe their baby as he struggles. They can't even hold him. He has a ventilator, a catheter, feeding tubes, 2 IVs, monitors and temperature gages.



Please pray for complete healing and a quick release from the hospital. Also pray for strength of mind, body and spirit for the parents.

Pattern Play


Recently I have been thinking about trying to make a few pieces of clothing for myself... It's been a looooong time since I have made any clothing items and I am afraid I will be a bit rusty. After studying Clothing Design in school I was pretty turned off by designing/making clothes, but have been wanting to try it again.

I am itching to make a loose drop waist shift or 90's baby doll style dress... Does anyone know of a good resource for patterns like this???

Cooling off and other fun stuff

The girls and I just got back from a trip to visit my parents. My parents work as year-round staff at a Christian conference center and Bible camp in Washington. My Dad works maintenance and my mom is head of housekeeping. They are incredibly busy this time of year, but took a break to entertain us during some of our visit. The setting is ideal on a big lake and there is no shortage of things to do. It is a kid's paradise, if only we didn't have to drive 3 hours to get there. 3 hours not including bathroom stops and "I'm famished and might die" stops for food. On the agenda: bouncy house, swimming in the pool, water slide, drinking pop in the dining hall at every meal, and visiting the 3 play grounds multiple times.




The weather was a bit chilly when we got there, but warmed up each day in the afternoon to make swimming in the pool very fun. I am going to try and remember that I recently had to wear long pants, socks, and a fleece to keep warm as the temperatures creep up passed 100 degrees this week.

Emma swam around on her noodle to her heart's content.




Mandy also loves the water.




A bit too much. She has no fear and jumped in twice without anyone to catch her. Even though I lifeguarded, I am still amazed at how a little child can so quickly slip under water while adults are right there. Both times Mandy went under I was close by, but not close enough to get her right away. My life-guard brain told me that the few seconds under water didn't hurt her, but visions of her struggling under water haunted my dreams that night. Please let this be a reminder to you to be extra vigilant with your children in the water. Life is precious.




The next day of swimming had Mandy being much more cautious, hanging on to Grandma for dear life. 

Speaking of fearless...



Emma scoped out the water slide one evening after dinner and decided she wanted to try it the next day. It is about 100 feet long and goes down the steep hillside straight into the lake. I was sure (or maybe I was hoping) that once she saw it in action she would chicken out.

But I forgot that my fearless 4 year old doesn't chicken out. She watched the big kids for a few minutes and then said she was ready. 




This won't be the last time her adventuresome spirit leads her down exhilarating paths. Just look at the look of excitement on her face as she speeds down the slide into open water!

I can hear the phone call now, some years in the future, "Hey Mama, I'm in Tajikstan! The train trip from China was only a few days long, so I figured, why not? Don't worry. I met some nice guys from Italy and they seem to know where they are going, although they don't speak any English."

My husband has family that lives near my parents and I called up cousin Sara (and blogger friend) to come and swim with us. While the others got their fill of the water, I held Baby Ben. Mandy was whining beside me and I assumed she was jealous of my attentions going to the baby. But I soon figured out that Mandy wanted the baby to herself.




Mandy wasn't happy unless she was holding the baby and the baby wasn't very happy unless Mandy was nowhere in sight. Our little baby boy will be getting love overdoses from his attentive sisters. Both Emma and Mandy love babies and Emma talks daily about her boy baby who is coming soon through a small hole. Ya, something like that and don't remind me. She also enjoys coming up with names. Today she told her Sunday School teacher that her boy baby was named Mongo. Yesterday it was Boysen. 

Cousin Abby (1 month younger than Mandy) really enjoyed the water. This was her first time in a big swimming pool and she loved it.





I have no idea what the lady in the background is doing. Sorry Sara, I'll crop her out and send you a picture, but she was too funny not to include.

On Friday, I attended a workshop for Handwriting Without Tears, a curriculum that I plan on teaching Emma this Fall for preschool. More on that later. But I am really happy I went, Seattle traffic aside.




I was happy to take the picture of one of my parent's co-workers and family. Have camera, will travel, should be my tag-line for my business.



These children are so beautiful. I would like to think I am just brilliant, but I had to double check the captured picture 14 times to realize I actually got all three smiling perfectly. This never happens! I can't wait to get the pictures edited.

Four days away from my husband is enough and we made the trip back to the hottest weather on record forecasted for this week. Why did I leave the pool-side again? We had a great time, but it is good to be home. We made it home in time to hear news of our newest nephew, Jamin Ezra (pronounced Jay-min), born to Jeff's brother and wife on Saturday. Jamin is having trouble breathing and is not doing as well as we would hope. There is nothing like the anxiety for a tiny one who is sick. I'll continue to put updates on FB as I hear them. 

Right before I left, I finished the girls' room and I will post pictures as soon as we clean it up again. They can't seem to remember that we live in a Pottery Barn catalog and messes are not allowed.

Head-to-Toe, What Would You Pick?

My super-cute friend Missy and I were chatting the other day about clothing brands and we both came to the conclusion that if we had to pick one brand to wear head-to-toe exclusively it would be A.P.C.... Classic French, quirky, gamine, slightly preppy, part city, part woodsy-outdoors, something a chic librarian might wear...

Of course, the next day I received the email that A.P.C.'s A/W collection was up on the site and my claim to want to live in only their clothing was solidified!

Ask Camp Comfort: 10-Year Reunion

Last night I had the totally awesome pleasure of meeting one of my new Portland neighbors, Jess of Heartthrobs & Villains... She's fantastic and has very cute style! Anyways, Jess has been looking for something to wear to her upcoming 10-year High School reunion and asked if I might have any suggestions, so I thought I'd go ahead and post a couple for Ask Camp Comfort.

Jess noted that she was possibly looking for a silky black romper and some cut-out shoes.... Now, I have to insert here that I actually skipped out on my 10-year reunion last summer, so I may not be the expert on appropriate attire. But I do know it's absolutely essential to look natural, at-ease and of course, stunning! So, without further delay, the outfits:
